Ingredients : 

8 cups of vegetable oil for frying
2 cups of flour
¼ cup of corn starch
2 tsp sugar
2 tsp salt
½ tsp baking powder
½ tsp baking soda
½ tsp onion salt
½ tsp paprika
¼ tsp ground black pepper
16 ounces club soda
2 pounds of cod or another white fish, cut into 3-ounce chunks

Instructions : 

1. Warm 8 cups of vegetable oil at 350 degrees Fahrenheit in a deep fryer or large heavy saucepan.
2. Combine the flour, sugar, corn starch, salt, baking soda, paprika, onion, salt, and black pepper to make the
batter. Stir to mix.
3. Mix in the club soda with the dry ingredients. As the batter foams, whisk it again.
4. Put the battered fish pieces into the heated oil after coating them with it.
5. Fry for two to three minutes, until the batter is golden brown and the fish begins to rise to the surface of the oil.
6. Place the fish to drain on a wire rack.
Notes
1. Gently place the fish into the basket, holding it there for a few seconds to produce a crust to prevent the
batter from adhering to the bottom of the basket.
2. With a terrific taste, try substituting beer for the club soda.
3. Do you have some batter left over? Make onion rings by slicing some onion rings.
