Ingredients : 

BBQ Chicken
8 ounces boneless and skinless chicken breasts
1 tbsp olive oil
2 tbsp barbecue sauce
16 ounces pizza dough
2 tbsp semolina or cornmeal
½ cup of barbecue sauce
2 tbsp shredded Gouda cheese
2 cups of shredded mozzarella cheese
¼ cup of sliced red onion
2 tbsp chopped fresh cilantro

Instructions : 

BBQ Chicken
1. First, cook chicken in olive oil in a large frying pan over medium heat for about 5-6 minutes, until no pink
in the center. Avoid overcooking.
2. Refrigerate the cooked chicken until well cooled.
3. Apply two tsp of BBQ sauce to the cooled chicken. Restore it to the refrigerator.
To Make the Pizza
4. Before baking pizzas, position a pizza stone in the middle of the oven and warm it for an hour to 500
5. On a work surface, scatter semolina.
6. Roll out the dough by putting half of the pizza dough on the semolina.
7. Distribute ¼ cup of barbecue sauce evenly over the surface of the prepared dough within the rim using a big spoon.
8. Add 1 tbsp of Gouda cheese on top of the sauce.
9. Add ¼ cup of shredded mozzarella on top.
10. Place half of chicken pieces over the cheese in an equal layer (approximately 18 pieces).
11. Over the surface, scatter 18-20 slices of red onion.
12. Spread an extra ¼ cup of mozzarella on top of the pizza.
13. Now place pizza in the oven, and bake for 8-10 minutes, until the cheese is bubbling and the dough
is crisp and golden.
14. Carefully take out the pizza from oven once it’s done cooking, and then drizzle 1 tbsp of cilantro all
over the top. Slice, then dish.
15. Make a second pizza using the leftover ingredients. Carefully positioning the pizzas on opposite
sides of the pizza stone will allow you to cook both pizzas at once.
